FOOD
SAFETY:
Safety is always
our number one concern!
We at Air Concierge go beyond industry-standard principals to operate
our company safely.
Our
clients should be assured that we place their safety and the safety
of the flight crew members first and foremost. Air Concierge begins
by ensuring that our catering is made from products acquired from
only the most recognized purveyors that have proper documentation
regarding their supplier's food sources. This is an important first
step in ensuring product quality, presentation and value to our
clients. Air Concierge then adheres to the State of Florida Department
of Business and Professional Regulation food handling policies and
procedures.
Delivery
Logistics :
The most common parties handling the catering or controlling
access to the catering are:
- The catering
company and delivery personnel
- The FBO
and line crew
- The flight
crews
Recently
the FAA has changed ramp access procedures in an effort to improve
passenger and crew safety, which has restricted delivery vehicles
from the aircraft operations areas. Unless this regulation is changed
to allow our delivery vehicles access to the ramp, all catering
is delivered to the FBO or designated facility by the party requesting
the catering. This is a critical point in the chain of custody process,
because the receiving party now assumes control over the catering.
Once the catering is checked for order accuracy, it is signed off
as complete and is either:
- Taken by
a representative of the FBO or delivery facility. The catering
is either immediately loaded onto the aircraft or stored in a
suitable location such as a refrigerator or galley supply area.
OR
- Delivered
by our personnel to either the aircraft or a suitable location
as directed by the receiving party.
- Responsibility
is then transferred to the FBO or receiving party.
